What is the difference between extra virgin olive oil and classic olive oil?
Extra virgin olive oil is the highest grade of olive oil and is obtained directly from olives and only by mechanical methods. Its acidity does not exceed 0.8 and is a perfectly natural product. Olive oil (or classic olive oil) is a mixture of processed (refined) olive oils and virgin olive oils. Its acidity does not exceed 1. However, it is a product of lower quality than extra virgin olive oil.
What are Protected Designation of Origin (PDO) and Protected Geographical Indication (PGI) products and what their markings mean?
